Christopher VanEpps became the proud owner of Maitre D’ at Trombinos, a restaurant boasting new age American fare, in the iconic Trombino’s building at 12 Pearl Street, Lyons, in the fall of 2017. VanEpps, a former Pittsford restauranteur, brings a 19-year restaurant career to the Wayne County and Finger Lakes region. His vision is create a big city flare to the area without big city pricing, while supporting other local food and beverage purveyors. VanEpps’ motto is “I eat, sleep, breath restaurants”.
VanEpps redesigned the restaurant space, tapping into the history of the iconic building while creating a new flare. The building has a rich history, dating back to 1869 when it was a carriage barn prior to being converted into the Park Hotel. The building then became the Regent Theater, where Vaudeville and silent films were enjoyed. In 1946, Sam Trombino, Sr. and sons bought the building and converted the theater into a restaurant. The Trombinos operated the restaurant until 1978 when Paul and Mike Santelli purchased the property. The Santellis operated the restaurant until it was sold to Sean Dobbins; and Van Epps opened Maitre D’ at Trombino’s.
VanEpps has maintained the historic ambiance of a livery, opera house and restaurant. The Maitre D’ menu ties in the history of the building. The restaurant offers overtures (appetizers), interludes (salads), finales (entrees) and encores (desserts) ranging from fish tacos, artisan stone-fired pizzas, and burgers to high-end steaks, chops and seafood. Maitre D’ also offers both vegetarian and gluten-free dishes. The menu features ingredients from local farmers, and offers local beer and wine choices.
VanEpps believes it’s important to support local businesses and provide fresh ingredients. He believes in capturing the value of small town living where community reaches out to others. People help others and lend a hand, so everyone is working together like neighbors are meant to be.
